Ingredients
- 1 cup Blueberries (fresh or frozen)
- 1 1/2 cup peaches (chopped to bite sized pieces, fresh or frozen)
- 1/4 cup all purpose flour
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 teaspoon Whiskey
- 1 Package Great Value 2 piece pie crust (both sheets cut into quarters)
- 1 egg yolk
- 1 teaspoon water
Instructions:
Preheat the oven to 425 degrees.
Mix the fruit, flour, sugar, extracts, & whiskey in a large bowl
Cut the quartered pie crusts into square shapes. Set aside extra dough. Using a slotted spoon to avoid scooping up excess liquid, place 1/8 of the mix in each quartered pie crust. Fold over and press the edges together. Using a fork, make tine marks all the way around. Be careful not to poke the dough. | |
If you want to decorate the top of your pie, roll out the excess dough and cut with a cookie cutter. I made pumpkins. Place on a parchment lined cookie sheet and brush the top with the mix of egg yolk and water. Bake for 20 minutes. If you use another pie crust rather then Great Value, bake according to package directions. |
Note
Change the fruit to a mix of blueberry and apples or even pineapple for a tropical flavor
